The Florentine Kitchen Knives 2nd Maker's Edition is a limited run of 30 Classically inspired Gyuto knives. This edition's handles were designed by one of our makers,  Alejandro Marzoratti, who has a history as a carpenter and designer and has been at FKK for the past 3 years. The knife's design draws from both traditional Japanese and western styles, making it a combo of 2 classics. 

The blade is made from 14c28 Sandvik stainless steel and has undergone cryogenic treatment to harden it to 60-61HRC, polished spine and choil for detail and comfort. Each knife handle is made from solid hard teak wood which Ale likes to work with because of its high oil content which adds to its longevity as a kitchen knife. The handles are fitted with a thick milled Brass bolster and a brass rivet to secure the handle and blade stay together forever. Despite its robust looks this knife is very light at under 200gr and is very agile for its 240mm long blade. Each knife in this edition is individually numbered, making it a unique and one-of-a-kind piece.

This edition is a great choice for those who appreciate the craftsmanship of well-made kitchen knives and are looking for a timeless and classic design. This large all purpose kitchen knife is long and tall, and can be used for most cutting board tasks. These knives have a thinner, lighter and harder blade than most western equivalents. They work extremely well for slicing meat and fish but make quick work out of vegetables as well.
