Santi Ortiz, the head bartender at the famous Bad Company 1920 Bar in Madrid, is not just an expert mixer - he's a master ice sculptor who has spent years studying, teaching, and obsessing over ice as a material. For a couple of those years, he's been working with blades we made especially for him. This collaboration is what came out of sitting down together and refining that tool to its final form.\u003c\/p\u003e\n\u003cp class=\"font-claude-response-body break-words whitespace-normal leading-[1.7]\"\u003eThe result is something that lives at the intersection of the bar and the workshop. A wide, heavy blade with real chopper geometry - 60mm of height gives it the mass and leverage to crack through a block of ice cleanly and with control. The double bevel grind on our 14C28N steel is hardened for impact and durability, but sharp enough to go straight from ice to citrus to herbs without changing tools.
