DEBONING DAGGER

This month’s Maker’s edition is another butchery specialty knife. This edition was inspired by both classic European and Japanese boning knives, ideas which we have fused into one completely new knife. We have set our goals to design within our company's design DNA and to produce a tool for extraordinary functionality and performance. This process has led us to the creation of a new handle element as well as a new blade shape. Just 12 of these knives were made from high carbon 52100 steel using brass, black paper Micarta and leather spacers.
