About us
At Florentine Kitchen Knives we create quality, hand-manufactured kitchen knives for both the professional chef and everyday cook. we believe that a steadfast, premium well made tool has the power to completely change your experience in the kitchen. our knives are a fusion between east and west, heavily inspired by our own heritage. this is reflected in both the functionality of the blades and the design elements, the end result is a contemporary yet timeless object of use.
Florentine Kitchen Knives was founded in 2012 by industrial designer Tomer Botner. In 2016 he was joined by his wife Noam Blumenthal, a fashion designer. The brand started in the neighbourhood of Florentin, south-west Tel-Aviv, after which the business takes its name. Each year, FKK release limited editions of the signature stacked handled knives and have made custom kitchen and table knives for many of the world’s finest restaurants and most accomplished cooks.
In 2018, the first workshop and retail space opened in FKK’s new home of Barcelona, Spain. The new workshop and store space is open to the public and allows you to see and understand FKK’s knife making process, as well as read and learn about the history and tradition of knife making, customise your own knife, and purchase some knives for your kitchen or dining table.

What is the chef knife used for?
our f4 cook/chef knife is an all-around utility knife for all jobs intended to be done on the cutting board. this means it’s the most used knife in the kitchen, good for almost anything.
what is the paring knife used for?
the f4 paring/office knife is your go to knife for everything you would do in your hands and not on the cutting board. this means it’s most suitable for precise actions like peeling and garnishing.
what is the difference in steel types that you offer?
the main difference between the steels we use is in the amount of care you need to give our carbon steel knives as opposed to the more comfortable care of stainless steel. steels are classified as stainless by the chrome content in them (important to state they stain less and not no stain at all!). carbon steels usually have a higher carbon content than stainless which in general makes it harder and stronger but less ductile. it's important to note that carbon steel will rust easily if not taken care of the right way, but with the right care will keep a great edge and age beautifully. the stainless steel will stay pretty much the same if cared for. you can find the details outlined in the customisation section of our site.
what are the different handle types that you offer?
you can choose from either the stacked or scaled handle options. our signature stacked handle is formed from a series of black leather and coloured micarta discs (a strong composite material of canvas and resin). this gives a bold, striped effect that we have become synonymous with. the scaled handle option is a bit more traditional but with an updated contemporary edge. for the scaled handle you are able to choose from micarta or varying stabilised wood handles as well as different coloured micarta handle liners.
do you sharpen knives?
yes, we do, but we will give you a price once we see the state of the knife. knives have to be delivered to and picked up from our shop. if there are customs charges to be paid with international shipments we will ask you if you want to pay them or refuse them. we sharpen and tune up fkk knives for free, forever.
can i modify my order once i have paid for it?
as long as we haven’t started working on your order we will happily modify it.
