Kedma Gyuto

The large all purpose kitchen knife. Long and tall, and can be used for most cutting board tasks. These knives have a thinner, lighter and harder blade than most western equivalents. They work extremely well for slicing meat and fish. Our original design, an octagonal handle with stacked discs assembled around the tang of the blade. Delivery time up to 8 weeks.

GENERAL INFORMATION:

This steel sharpens quite easily and takes an extremely sharp edge. This alloy offers no corrosion resistance. Because of it's hardness it offers less resistance to chipping or breaks, but has a very high edge holding and strength.

EASE OF CARE:

A very unforgiving steel. Must be well cared for.
