This is our latest Maker’s Edition for October 2024. These high-carbon steel, "Tanto" style slicers with "Hamon" are crafted in a limited batch of only eight individually numbered knives. The Hamon line is created by applying a special clay paste to the spine of each blade, resulting in a unique difference in hardness between the covered and uncovered areas. After a great deal of polishing, this process produces a faint white line along the blade and a subtle contrast between the two sections, with a harder edge and a softer spine.
With a 200mm blade length, a narrow profile and a super thin edge, this knife is designed for precision slicing and portioning of medium-sized products, particularly fillets of fish and meat, in a single, fluid motion. The Tanto’s single-beveled edge (we have 2 versions, one for lefties and one for righties), combined with the high-hardness carbon steel, allows for clean, even cuts while minimizing friction and tearing.
Made from C125U/C130/1.1563 carbon mono-steel with an edge hardness of 62 HRC, each knife is fitted with a solid brass bolster and red Micarta composite handle discs, and is sold with a matching red composite blade guard.
