Description
This month's Maker's Edition was born out of a working relationship with another craftsman. Santi Ortiz, the head bartender at the famous Bad Company 1920 Bar in Madrid, is not just an expert mixer - he's a master ice sculptor who has spent years studying, teaching, and obsessing over ice as a material. For a couple of those years, he's been working with blades we made especially for him. This collaboration is what came out of sitting down together and refining that tool to its final form.
The result is something that lives at the intersection of the bar and the workshop. A wide, heavy blade with real chopper geometry - 60mm of height gives it the mass and leverage to crack through a block of ice cleanly and with control. The double bevel grind on our 14C28N steel is hardened for impact and durability, but sharp enough to go straight from ice to citrus to herbs without changing tools. The 120mm handle is long and deliberately hefty, designed for a full grip and the kind of confidence you need when force is involved.
Each knife is this edition of 28 is individually numbered and custom engraved.

Care
Do not place in the dishwasher. Wash using a mild detergent and a non-abrasive sponge.
Store in a cool, dry place when not in use. Avoid cutting on glass, metal, ceramic, or bamboo surfaces to prevent blade dullness. Before extended storage, apply mineral or camellia oil to the blade and handle using a cloth.
