Forged from 1095 high Carbon Steel, the Florentine Forged XL Chef is a long, large workhorse of a knife, built for real cutting and finished to a high standard.
The blade runs about 235-240mm to the tip and stands roughly 65mm at its tallest, giving it genuine presence on the board. It measures 5mm thick at the base and tapers down to a very fine tip, so all of that size never comes at the cost of control.
For its size, it stays remarkably light. The blade alone weighs around 185 grams, and the finished knife comes in at about 240 grams with the handle, a direct result of how thinly it is forged and ground. The forging also carries through into the surface: a beautiful pattern and finish that runs the length of the blade. It is a big knife with weight and reach behind it, yet it moves with the kind of precision you would expect from something far smaller.
Each knife is made to order and the handle is fully customizable with our selection of materials - Once you've placed your order, we will be in touch to work through your handle design with you and the matching blade guard, which is included and built according to your selection.
As each piece is forged and finished by hand, lead times will change and are currently 3-4 weeks.

Care
Do not place in the dishwasher. Wash using a mild detergent and a non-abrasive sponge.
Store in a cool, dry place when not in use. Avoid cutting on glass, metal, ceramic, or bamboo surfaces to prevent blade dullness. Before extended storage, apply mineral or camellia oil to the blade and handle using a cloth.
