Description
Available for shipping from stock. Forged from 1095 high Carbon Steel, the Florentine Forged XL Chef is a long, large workhorse of a knife, built for real cutting and finished to a high standard.
The blade runs about 235-240mm to the tip and stands roughly 65mm at its tallest, giving it genuine presence on the board. It measures 5mm thick at the base and tapers down to a very fine tip, so all of that size never comes at the cost of control.
For its size, it stays remarkably light. The blade alone weighs around 185 grams, and the finished knife comes in at about 240 grams with the handle, a direct result of how thinly it is forged and ground. The forging also carries through into the surface: a beautiful pattern and finish that runs the length of the blade. It is a big knife with weight and reach behind it, yet it moves with the kind of precision you would expect from something far smaller.
