Description
Traditionally used for breaking down poultry, this stiff-bladed fillet knife offers longer lasting sharpness, precision, and strength. It’s built for cooks who prefer control over softness—a knife that rewards a skilled cook or butcher and favours accuracy and confidence in movement. To balance the high hardness, we designed the geometry of the blade to give it toughness, with a wider angle behind the edge yet still very thinly ground, delivering the bite Carbon steel is known for. It’s designed to perform under pressure and stay sharp through serious prep work.
This blade is made from 1095 Carbon steel at 63 HRC. Each blade measures roughly 170mm in length, 33mm tall at the heel, and 3mm thick at the spine. We paired the blade with a Brass bolster and an Ivory/Tan patterned handle—a warm, classic combination that will age beautifully with use. Each knife is hand-finished and individually numbered, available now in a limited edition of 12 knives.

Care
Do not place in the dishwasher. Wash using a mild detergent and a non-abrasive sponge.
Store in a cool, dry place when not in use. Avoid cutting on glass, metal, ceramic, or bamboo surfaces to prevent blade dullness. Before extended storage, apply mineral or camellia oil to the blade and handle using a cloth.
