Christian was introduced to me by Nick Bril, and he invited me to his restaurant for dinner to get a feel for the place and the food. This trip, which was our first and only face to face encounter so far, was one of the most memorable sixteen hours or so I've had in this business.

It was a short and lonely flight on a twenty-seater, propeller powered, aircraft to Luxemburg and a short car ride across the border to Germany and into the hotel, casino and restaurant complex where the (many years and counting) 3 Michelin star Victor’s Fine Dining resides. I was shown to my room, which was filled with art and antiquities and a huge red velvet canopy bed. Then to meet Christian and the family for a chat, followed by a long, multiple course dinner from his extraordinary cuisine, a marriage of French classical techniques and flavours matched with Japanese ones. All of this was paired with wonderful wines, all from the Riesling grape. One of the best meals I’ve had. After dinner, chef and I stayed for a drinks and a chat until the early hours of the morning. At the break of dawn I was on my way back to the airport.

We have since made two bespoke editions for Victor's Fine Dining - The first using the same blade design as the one we used for The Jane, with a full Black leather handle and a single Red disc. This was the first time we made an all leather handle and the design worked wonderfully well with the space. The second edition was a smaller and slimmer knife in three color and material combinations.
