Description
For our May Maker’s edition, we have created 28, individually numbered, large format Fillet knives, in the now rare, German made, Nitro X7 high carbon stainless mono-steel. These have been through quenching and Cryo to bring them to 61hrc. The design is an homage to one of our first maker's editors, the fisherman's friend but this time we took everything to the extreme. More curves, bigger, more flex and thinner edges. The size of this knife puts it between a Slicer and a Fillet knife, capable of performing both tasks very well. It is fitted with a thick pattern Brown and Ivory Micarta and Tan leather handle and a solid brass bolster.
With a 170mm long, narrow and slightly flexible blade with an ultra thin tip, the Nitro Fillet allows you to fillet and slice large or small produce in one fluid motion. Aside form filleting fish and meat It is optimised for cutting thin, even slices, making it a great tool for preparing Sushi, carving meats and portioning poultry or ham.

Care
Do not place in the dishwasher. Wash using a mild detergent and a non-abrasive sponge.
Store in a cool, dry place when not in use. Avoid cutting on glass, metal, ceramic, or bamboo surfaces to prevent blade dullness. Before extended storage, apply mineral or camellia oil to the blade and handle using a cloth.
