    Description

A slicer built for clean, confident cuts, with a K-tip profile that lands a fine, precise point exactly where you want it. Where most slicers run long and delicate, this one is shorter and more purposeful, with a more robust tip that stands up to real work. A classic slicing knife with a twist, equally at home breaking down proteins, portioning roasts, and laying down long, even slices with full control.

The blade measures almost 230mm tip to tip, 360mm overall, with a generous 44mm max height for presence on the board and clearance for your knuckles. It's cut from 3mm 14C28N, a Sandvik stainless steel, known for its fine grain and clean, keen edge, and runs at 60 HRC. A satin finish sits over a convex grind that keeps the blade strong behind the edge and gives clean, smooth food release.

The twist is in the handle, and it's where the knife gets its name. Rather than a single block, the handle is a scaled build: Black and Red Micarta scales fixed to both sides of the tang and locked down with three brass rivets, a four-part encapsulated construction that wraps the steel completely. It weighs around 200g, with a weight and balance that feels great in the hand.

This is a one-time run of 24 pieces, each individually numbered.

    Care

Do not place in the dishwasher. Wash using a mild detergent and a non-abrasive sponge.
Store in a cool, dry place when not in use. Avoid cutting on glass, metal, ceramic, or bamboo surfaces to prevent blade dullness. Before extended storage, apply mineral or camellia oil to the blade and handle using a cloth.

Do not work with dull knives. Sharpen them often to professional standards. For sharpening services and workshops, contact our friends at thesharpening.shop
