Description
For our first Maker’s edition of the year, we have created twenty-five, individually numbered, extra large format Fillet knives, in high CX90 French Carbon mono-steel at 59HRC. The design is a fusion between a Slicer and a Fillet knife, capable of performing both tasks very well. It is fitted with a modern, single colour Micarta and Black leather handle, making these knives ultra light.
With a 21cm long, narrow and flexible blade, the XL Fillet allows you to slice large or small produce in one fluid motion. It is optimised for cutting thin, even slices, making it an essential tool for preparing Sushi, carving meats and portioning poultry or ham, as well as start to finish filleting of medium to large fish.

Care
Do not place in the dishwasher. Wash using a mild detergent and a non-abrasive sponge.
Store in a cool, dry place when not in use. Avoid cutting on glass, metal, ceramic, or bamboo surfaces to prevent blade dullness. Before extended storage, apply mineral or camellia oil to the blade and handle using a cloth.
