    Description

    Our March Maker’s Edition is a bold take on a true butchery classic: the Hankotsu — the Japanese boning knife traditionally used for breaking down hanging carcasses. Compact, agile, tough and incredibly capable, it’s a specialty tool designed for precision work around bone, joints, and connective tissue. While rooted in traditional butchery, the Hankotsu is far more versatile than its origins suggest — equally at home breaking down beef, poultry, and fish, cleaning cuts, or handling delicate trimming tasks.

    This piece is inspired by one of our all-time favorites — the legendary Misono Hankotsu. We kept what makes that design iconic, then adjusted it to a more versatile everyday use and added a composite blade guard. Our design is slightly lighter at 160gr, with even grinding for ease of sharpening, it's also slightly smaller for improved balance and comfort with smaller parts, making it more adaptable beyond pure butchery tasks. The blade is crafted from 2.5 mm thick O2 steel hardened to 62 HRC, with geometry tuned to withstand impact and tougher materials while maintaining excellent sharpness and edge stability.

    Visually, this edition carries its own presence. A 10 mm thick copper bolster anchors the knife, adding weight where it matters and a part which will develop character over time. It’s paired with a bold orange composite handle, durable and confident in hand. This is a hard, sharp, and tough tool — built to perform — but it demands respect and proper technique. A specialty piece, yes, but an incredibly rewarding one in the right hands.

    Only 24 knives were made for this March Maker’s Edition, each individually numbered and comes with a magnetised Orange composite blade guard with felt lining.

    Care

    Do not place ​in the dishwasher. Wash using a mild detergent and a non-abrasive sponge.
    Store in a cool, dry place when not in use. Avoid cutting on glass, metal, ceramic, or bamboo surfaces to prevent blade dullness. Before extended storage, apply mineral or camellia oil to the blade and handle using a cloth.  ​
