    Description

    For our February Maker’s Edition, we present a refined expression of our Florentine Chef’s knife in very fine-layered Damascus steel. The steel was lightly hammered to introduce movement into the layers, then ground, heat treated, and finished to a high standard. After extensive work with this material, this edition marks a high point in our work with Damax.

    Each blade undergoes a lengthy finishing process with alternating etches, hand sanding, belt finishing, and polishing, resulting in a smooth but graphically textured surface. Hardened to 62 HRC, it delivers excellent edge retention and cutting feel. 

    The handle is built from alternating thin layers of black leather and Walnut discs, finished with a brass bolster, black Micarta pommel, and brass rivet - a classically balanced composition that complements the complexity of the steel. A beautiful Walnut blade guard with red felt lining is also included with this knife.

    Care

    Do not place ​in the dishwasher. Wash using a mild detergent and a non-abrasive sponge.
    Store in a cool, dry place when not in use. Avoid cutting on glass, metal, ceramic, or bamboo surfaces to prevent blade dullness. Before extended storage, apply mineral or camellia oil to the blade and handle using a cloth.  ​
