Join us on November 23rd for the 3rd Factory Dinner at the Florentine Kitchen Knives workshop, where community, craft and cuisine come together for one unforgettable evening. This time, our resident chef Jack Tonkin of Ona (Poblenou) welcomes Chef Marietta Richter of the acclaimed wine bar/restaurant Safo (Girona) for a special collaboration titled “Pura Sabrosura” — simply put, pure flavour.
Marietta’s cooking at Safo is flavourful, seasonal, and deeply personal — a reflection of her experiences, cravings, and emotions. Each dish she creates is born from a memory or curiosity, translating feeling into flavour. Jack’s approach, rooted in hyper-local ingredients and technical precision, seeks the essence of taste in its purest form — in this place, in this moment. Together, their collaboration promises an harmonious dining experience.
To accompany the dinner, we will be pouring some of our favourite local Catalan wines, all included in the price of the event. Some of the highlights on the evening's 6 course menu will be a surf and turf tartar with Pomme Soufflé, Galette shalotte with cream and Compte 18 month, Red mullet on charcoals with Kale and Yuzu Beurre Blanc, Fall salad of seasonal fruits leafs and flowers and Duck Egg Ice-cream.
As always, the dinner unfolds in our workshop space — where knives are crafted by hand, and where we gather around one long table to share wine, food, stories, and laughter. These evenings are about conviviality: slowing down, connecting, and celebrating good company.
