Description
Our first time collaborating with a maker outside the Barcelona workshop - the great Benjamin Kamon from Vienna, Austria. Kamon's knives are some of the most sought after on the planet and are renowned for their cutting performance and accuracy. With this project we set out to give you the best and most exclusive of both of our lineup characteristics combined.
We decided to use the Stainless 14c28n in 3mm thickness for the blade. The profile is Kamon's 'go-to' Gyuto in 270mm edge length and 64mm height. With Kamon's compound grinding, he managed to make the blade incredibly light, and get down to around 135g blade weight, even though the blade blank started out at 290g. Including the handle, each knife weighs around 215gr. The S-grind, which improves food release as well, is the main reason for the low weight, despite the rather large size of this knife. In addition to that, the knife features a distal taper from tip to handle. After the very thin tip which starts at nearly zero, the thickness of the blade at the spine in the region of the start of the S-grind is about 1.75mm. A complete Benjamin Kamon grind, a rarity on Stainless Steel.
For the handle we wanted to maintain the light construction theme and used 10mm thick Aluminium pieces to form the pommel and bolster, and adding three more 3mm thick Aluminium discs to accurately balance the knife's weight. We inserted a brass piece in the pommel, which sits flush on the butt of the knife, reminiscent of our blade Brass inserts of old. The curved handle is complete with Black paper Micarta discs and leather spacers. This blade has tremendous accuracy and surprising agility to its size. These thirty unique, top performers are also individually marked and numbered as part of this May Maker's Edition.

Care
Do not place in the dishwasher. Wash using a mild detergent and a non-abrasive sponge.
Store in a cool, dry place when not in use. Avoid cutting on glass, metal, ceramic, or bamboo surfaces to prevent blade dullness. Before extended storage, apply mineral or camellia oil to the blade and handle using a cloth.
