    Description

    The Deba design dates back almost 500 years and is one of the oldest and most distinct Japanese knives. It is still widely used for fish butchery around the world, and is known for its combination of precision and sturdiness. Although it traditionally features a single bevel geometry, our version features a double bevel ground, Alleima’s 14c28n High carbon 3mm stock Stainless Steel, at 58-59HRC. This makes for easier care and accessibility for both hands.

    The limited Maker's Edition of sixteen knives is hand ground and sharpened, fitted with a Brass bolster and Black leather and Micarta handle. It is engraved with a lovely fish scale decoration and is individually numbered.

    Care

    Do not place ​in the dishwasher. Wash using a mild detergent and a non-abrasive sponge.
    Store in a cool, dry place when not in use. Avoid cutting on glass, metal, ceramic, or bamboo surfaces to prevent blade dullness. Before extended storage, apply mineral or camellia oil to the blade and handle using a cloth.  ​
