    Description

    A medium sized, utilitarian kitchen knife that does just about anything on the cutting board. The Bunka is compact and agile for detailed work, but confident enough to take on the heavier tasks most knives this size would shy away from. A genuine all-rounder, equally at home with vegetables, herbs, and proteins.

    This is a remake of our Nitro X7 Bunka that won the maker's cup, this time in carbon. The 170mm by 50mm blade keeps the exact same profile and dimensions, now cut from 1095 carbon steel and run as hard at 63 HRC. The one change that matters is stock thickness, down to 2.7mm, and you feel it immediately: less wedging, cleaner separation, a sharper and more precise cutter than the original. A convex geometry keeps it strong behind the edge and gives clean, smooth food release. 1095 takes a very keen edge and comes back to it easily on a stone, which is the trade you make for a steel that lives and reacts.

    The blade is blackened with a forced patina, detailed with the same laser-marked circles across the upper blade. The handle repeats the pattern of the original, built entirely from composite Micarta, now in a Black and White gradient set behind a brass bolster. It weighs around 190g, lighter than the original and quicker in the hand for it. Each knife comes with a matching Black Paper Micarta magnetic blade guard.

    Carbon wants a little attention. Clean and Wipe it dry after use, keep it out of the sink, and the patina will keep shifting and deepening with everything you cut.

    Care

    Do not place ​in the dishwasher. Wash using a mild detergent and a non-abrasive sponge.
    Store in a cool, dry place when not in use. Avoid cutting on glass, metal, ceramic, or bamboo surfaces to prevent blade dullness. Before extended storage, apply mineral or camellia oil to the blade and handle using a cloth.  ​
