    Description

    This numbered limited-edition knife (only 10 made) is the result of a collaboration that fuses two distinct visions of knife-making into one out of the ordinary creation. At its core is a hand-forged High-Chef model blade by Ben, paired with two interchangeable handles designed and crafted by us, along with a custom blade guard. The concept plays with the tension between Yin and Yang, a kind of split personality in tool form. One handle offers a larger, firmer grip for power and control, while the other is slimmer and lighter, designed for more delicate, precise work. Depending on which handle you choose, the knife transforms—shifting from a bold, assertive tool to a refined, elegant instrument.

    The blade itself is forged from 1.2519 high-carbon tungsten-alloyed tool steel and hardened to around 65 HRC, giving it exceptional wear resistance and longevity. Finished with Ben’s signature wave-textured pattern, it not only showcases striking craftsmanship but also improves food release during use. With its thin, slightly convex edge and pronounced distal taper, the blade balances agility, precision, and raw cutting power, ensuring an uncompromising experience for the cook who wields it.

    This project is an exploration of duality and versatility. It represents the meeting point of Ben’s uncompromising forging and Florentine Kitchen Knives’ design approach, resulting in a tool that adapts not only to your hands but also to your style and intent. Each package includes one blade, two interchangeable handles, a screw, an Allen key, and a custom double faced blade guard.

    Care

    Do not place ​in the dishwasher. Wash using a mild detergent and a non-abrasive sponge.
    Store in a cool, dry place when not in use. Avoid cutting on glass, metal, ceramic, or bamboo surfaces to prevent blade dullness. Before extended storage, apply mineral or camellia oil to the blade and handle using a cloth.  ​
