Description
Our November Maker's Edition was made in collaboration with master sharpener Ayanori Suzuki, from The Sharpening Shop. Ayanori profiled, ground, hand finished and sharpened these Petty-Chef knives from High-end Japanese San-mai, Super-Gold 2 Stainless Steel. These utilitarian, ultra light, super thin and super sharp knives require some delicacy, but give back in extreme longevity and cutting ability.
The Petty knife is designed to do both cutting board work and hand-held tasks. Assembled in classic Walnut and Black leather and Brass spacers with a micarta bolster and pommel.

Care
Do not place in the dishwasher. Wash using a mild detergent and a non-abrasive sponge.
Store in a cool, dry place when not in use. Avoid cutting on glass, metal, ceramic, or bamboo surfaces to prevent blade dullness. Before extended storage, apply mineral or camellia oil to the blade and handle using a cloth.
