Description
Our October '24 Maker’s is a left handed short slicer. This high-carbon steel, "Tanto" style slicer with "Hamon" was crafted in a limited batch of only eight individually numbered knives. The Hamon line is created by applying a special clay paste to the spine of each blade, resulting in a unique difference in hardness between the covered and uncovered areas. After a great deal of polishing, this process produces a faint white line along the blade and a subtle contrast between the two sections, with a harder edge and a softer spine.
With a 200mm blade length, a narrow profile and a super thin edge, this knife is designed for precision slicing and portioning of medium-sized products, particularly fillets of fish and meat, in a single, fluid motion. The Tanto’s single-beveled edge, combined with the high-hardness carbon steel, allows for clean, even cuts while minimizing friction and tearing.

Care
Do not place in the dishwasher. Wash using a mild detergent and a non-abrasive sponge.
Store in a cool, dry place when not in use. Avoid cutting on glass, metal, ceramic, or bamboo surfaces to prevent blade dullness. Before extended storage, apply mineral or camellia oil to the blade and handle using a cloth.
